Cranberry Almond Shortbread Cookies

Mmmm. There is nothing like a warm cookies to bring out the Holiday spirit in your home! This easy recipe is a crowd pleaser that will bring the whole family to the kitchen to hang out around the island.


Cranberry Almond Shortbread Cookies

Cookie Ingredients:

1 c butter, softened

2/3 c sugar

1/2 tsp. almond extract

2 c all-purpose flour


Filling ingredients:

1/3 c red plum jam or preserves

1/4 c sweetened dried cranberries, coarsely chopped



Instructions:

  1. Combine butter, sugar, and almond extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour and beat at low speed until well mixed.

  2. Shape dough into 1 in balls and place two inches apart on a cookie sheet. Use your thumb to make and indention in the center of the dough. Use a fork to gently crimp the edges.

  3. Combine jam and cranberries in small bowl. Fill each cookie indentation with about jam mixture.

  4. Bake 14-18 minutes or until edges are lightly browned and enjoy after they cool!
